- 500 g semi-fat curd
- 200 g ladyfingers
- 100 g Erythrit
- 250 ml strong espresso
- 20 ml rum
- 3 eggs
- unsweetened cocoa for sprinkling

Instructions:
First of all, brew a strong espresso, into which mix 20 ml of rum. Let this coffee-rum mixture cool completely. Meanwhile mix 100 g of erythrit with 50 ml of water in a pot and cook on low heat until erythrit has melted. You will notice that Erythrit is melted when you see small bubbles on the surface of the mixture. In the bowl break the eggs and separate the yolks from eggs whites. Whip the yolks separately, then add a half of still warm soluble erythrit during whipping. Then whip egg whites until stiff, to which we add the remaining mixture from erythrit during whipping. Add curd to whipped yolks. When the cream is smooth, add whipped cream from white eggs into it.
Prepare a glass mold. We used 19 cm x 29 cm mold for this recipe. Dip ladyfingers in cold coffee-rum mixture briefly, not for a long time because they will get soggy. Then place them in the mold and layer half of the cream. Dip remaining ladyfingers on the cream, on which we layer the second half of the cream. Let the prepared tiramisu to chill and set up for at least 4 hours, ideally for the whole night. Before serving, dusk the tiramisu with unsweetened cocoa. Yummy!
