Fitness Recipe: Chicken and Ricotta Lasagna

An incredible combination of popular pasta, delicious tomato sauce, roasted chicken and cheese. You can enjoy all this in the new fitness recipe for chicken and ricotta lasagna. Bring a taste of Italy to your home!

Ingredients:

  • 400 g minced meat (we used chicken breasts)
  • 400 g of sliced canned tomatoes
  • 250 g ricotta
  • 250 g strained tomatoes
  • 125 g lasagna sheets
  • 120 g mozzarella
  • 100 g carrots
  • 100 g zucchini
  • 60 g Parmesan
  • 1 onion
  • 2 garlic cloves
  • 1-2 tsp vinegar (regular/wine)
  • a handful of fresh basil
  • salt, ground black pepper and dried basil according to your taste

Directions:

Cook the lasagna sheets in salted water until soft. In the meantime, prepare the sauce and start by cooking the finely chopped onion in olive oil. After a few minutes, add the pressed garlic and salted and spiced minced meat. Once the meat is cooked, add grated carrots, zucchini, strained tomatoes and sliced tomatoes. Cook the sauce for a few minutes and season it with dried basil, salt, spices and vinegar.

After setting the sauce aside from heat, stir in chopped fresh basil, and you can start layering lasagna. Add a thin layer of sauce to a baking dish then cover with lasagna sheets. Add about half of the remaining sauce to cover lasagna sheets and sprinkle it with half of the Parmesan and mozzarella. Next, spread one half of ricotta mixture (salted and seasoned). Repeat the process to fill the baking dish (finish with the ricotta and cheese layer). Bake at 180 °C until golden brown, about half an hour. Serve lasagna while still warm. Enjoy your meal!
