Can’t get enough of sweet potatoes? Not only are they a source of energy, they are also rich in many health-beneficial vitamins, such as Vitamins A, B and C. That’s why we have prepared a great fitness recipe for sweet potatoes filled with chicken and peanuts that will surprise you with a unique taste.
We need:
- 2 medium sized sweet potatoes (400 g)
- 250 g chicken breast
- 40 g peas
- 40 g ketchup or calorie free sauce Ketchup sauce
- 20 g unroasted peanuts
- 10 g Dijon mustard
- 10 g honey
- olive oil in spray
- a handful of chives

Preparation:
We’ll bake sweet potatoes first. Wash with warm water, dry, spray with a little olive oil and place in the oven. Bake sweet potatoes at 200 ° C for approximately 40 minutes. The baking time depends on the size of the sweet potatoes, so check them regularly. To identify a well baked sweet potato, gently prick it with a fork and make sure it is soft inside. In the meantime, cook the peas and lightly fry the peanuts in a pan covered with olive oil. The peas are cooked in 5 minutes and we roast the peanuts for about 5 minutes while stirring.
While we are baking sweet potatoes, we prepare meat. Salt the chicken breasts and lightly fry them on both sides in a pan coated with olive oil. Then add the water to the meat and stew until it softens. After suffocation and cooling, tear the chicken breast into small pieces. Mix the pieces of meat with Dijon mustard, ketchup, honey and boiled peas. The meat mixture can be seasoned with salt and spices if necessary. Cut the baked sweet potatoes while still hot in the middle, fill with the meat mixture, sprinkle with chives and peanuts and serve. We wish you bon appetite!
