Fitness Recipe: Pasta Salad with Cashew Dressing

A few slices of cucumber and tomato are not the only ingredients for a salad.  You can always make it a whole lot more fun and nutritious. How about adding some sweet corn, olives, and protein-rich legume flour pasta? Top it all off with our simple, but delicious cashew dressing that will delight every lover of nuts, and in just a moment, you whip up a delicious lunch or dinner, that is perfectly suitable for vegans too.

Ingredients for the base:

  • 200 g protein pasta
  • 200 g cherry tomatoes
  • 1 small red onion
  • 120 g canned sweet corn
  • 50 g black olives
  • 2 larger handfuls of basil (you can use dried basil)
  • salt according to your preference

Ingredients for the dressing:

  • 100 g cashew nuts
  • 120–⁠150 ml water (depending on consistency) 
  • juice from ½ of a lime
  • 1 tsp ground smoked paprika
  • 1 garlic clove
  • salt and ground pepper according to your preference

Directions:

Cook the protein pasta in salted water according to the instructions on the packaging. Meanwhile, dice up the red onions, tomatoes and olives into small cubes. Chop the fresh basil in rough chunks, or use dried basil. Put all of the prepped ingredients into a bowl together with sweet corn and cooked pasta, and stir.

In the next step, prepare the dressing. Use a food processor to blend cashew nuts, 120 ml of water, lime juice, smoked paprika, a clove of garlic, salt and ground pepper. Blend until you reach the consistency of delicate cream. If the dressing is too dense, add more water and blend again. When finished, pour the dressing into the bowl with other ingredients and stir it in. You may serve immediately, or let the salad sit in a refrigerator. When serving, don’t forget to decorate the dish with a few leaves of fresh basil and a slice of lime.
