Are you a fan of Asian cuisine and at the same time want to prepare a meal rich in protein? Then you’ll definitely love today’s recipe. The base is chicken breast, which provides the meal with enough protein. Moreover, there is also a mixture of vegetables and sauce made from ingredients typical for Asian cuisine. And, of course, a good side dish. We chose quinoa, but this meal would taste just as great, for example, with rice.
Ingredients for the chicken:
- 600 g chicken breasts
- 250 g red peppers (approximately 1 piece)
- 190 g baby corn cobs
- 150 g frozen bean pods
- 50 g cashew nuts
- 15 g ghee
- salt and ground pepper to taste
Ingredients for the sauce:
- 40 ml soy sauce
- 20 ml maple syrup
- 15 ml rice vinegar
- 10 g of corn starch
- 30 ml water

- 350 g quinoa
- spring onion for garnish

Method:
Start with preparing the sauce, you’ll need it later. In a bowl, mix soy sauce, maple syrup, rice vinegar, corn starch and water. Combine everything thoroughly and set aside.
Then take the chicken breasts and cut into smaller cubes, add salt, black pepper, and potentially any of your favourite spices. Heat some ghee in a deep pan and fry the meat on it. When it is still slightly pink, add diced peppers and baby corn cobs cut into smaller pieces. After a while, add also the bean pods and the sauce you’ve prepared earlier. Let everything cook together with occasional stirring until the meat softens and the sauce thickens. Finally, mix in cashew nuts and the meal is ready to be served.
Serve the Asian chicken with quinoa cooked according to the instructions, and spring onion.
Our tip: If you want to change the side dish, you definitely can’t go wrong with rice, bulgur or couscous.
