For 2 portions we need:
- 300 g chicken breasts
- 150 g canned pineapple
- 120 g quinoa
- 60 g baby spinach
- 30 g mixed nuts
- 40 g calorie-free BBQ sauce
- olive oil spray
- coriander
- lemon juice

Instructions:
Wash the chicken breast thoroughly and cut into pieces. Then mix them with calorie-free BBQ sauce and let it rest for few hours in the fridge. Then fry the chicken breast in a pan, which we brush in advance with olive oil spray.
In salted water cook quinoa until tender. Then mix it with spinach, pineapple, chopped nuts and coriander. Up to taste add lemon juice and eventually add a little juice from pineapple compote. Mix the salad thoroughly and serve it with chicken. Bon appetite!
