Gazpacho, a cold soup made of fresh vegetables, is popular in Spain in particular, but can spice up even your diet, especially during the summer months. In addition to balanced nutritional values, it offers an exceptionally creamy consistency without any cream or other thickener. Try this simple recipe, which will be ready in a couple of minutes!
Ingredients:
- 6 medium-sized tomatoes
- 2 bell peppers
- 1 slicing cucumber
- 200 ml tomato purée
- ½ onion
- 2 garlic cloves
- 2 tbsp olive oil
- ½ tbsp apple vinegar
- ground black pepper and salt
- dried herbs to your taste (oregano, basil)

Directions:
First, boil the tomatoes in the water and then peel them. In the meantime, peel the cucumber and cut it into small cubes. It will serve as a garnish. Cut the peeled tomatoes, onions, garlic and peppers into smaller pieces as well and then mix it all in the blender until smooth. Finally, add oil, vinegar, pepper, your favourite herbs, purée and mix everything well again. Taste it and season if necessary, and put the soup in the fridge for 2 hours. Garnish with cucumber and fresh herbs before serving. Bon appétit!
