The braided bread is a traditional butter pastry for some countries, which is served at Christmas. Here’s the protein version to satisfy everyone who loves food and holidays but still carefully monitors calorie intake. This sweet bread has less fat and more protein compared to classic recipes. Ingredients:
- 150 g fine spelt flour
- 150 g ricotta
- 100 g spelt wholemeal flour
- 40 g cane sugar
- 40 g butter
- 30 ml reduced-fat milk
- 20 g Just Whey protein in vanilla flavour
- 1 egg
- zest of ½ lemon
- 5 g almond flakes
- 2 tsp baking powder
- 1 tsp baking soda
- 1 egg yolk for greasing

Directions:
Mix fine flour with wholemeal flour, protein, sugar, baking powder, baking soda, and lemon zest in the bowl. Beat the egg until foamy and add it to the flour mixture. Next, add melted (but not hot) butter, ricotta, and milk. Knead the dough with your hands until smooth and non-sticky.
Now let’s get to braid bread dough. Divide the dough into five equal parts and create five strands with your hands covered in flour. They should be shorter than the length of the baking sheet. Braid a classic braid from three strands. Then braid the other two together. Place the braided bread on a baking sheet lined with baking paper and two braided strands on top.
Grease the braided bread with the beaten egg yolk and sprinkle it with almond flakes. Bake at a temperature of 170 °C for about 20-25 minutes until golden brown. The braided bread is done when a toothpick inserted in the centre comes out clean. Serve with butter and your favourite jam. Bon appetite!
