When you talk about apple desserts, most people in Central Europe would immediately think of the classic strudel. However, that’s not the only apple delicacy you can bake at home. Try this juicy apple pie, which works great as a breakfast, a snack or as a dessert with your afternoon coffee. It’s really easy to make. The hardest part of it all is waiting until it cools down so you can serve it on a plate and enjoy the perfect combination of crumbly dough and smooth apple and cinnamon filling.
Ingredients for the dough:
- 220 g whole grain spelt flour
- 50 g peanut butter
- 40 ml coconut oil
- 30 ml cold water
- 30 g cane sugar
- 1 egg
- a pinch of salt
- coconut cooking spray to grease the pan

Method:
Take a large bowl and start preparing the dough. First, mix the dry ingredients, i.e. flour, cane sugar and salt. Next, add eggs, coconut oil, peanut butter and cold water. Make a smooth and non-sticky dough. Put aside and let it rest.
In the meantime, start preparing the filling. Peel apples, cut into thin slices and put in a pot. Add cinnamon, xylitol, cornstarch, water and lemon juice. Simmer together for 10 minutes until the apples are soft. Let the filling cool.
Now back to the dough. Divide it into two parts (one slightly smaller than the other). Roll both into a circle. Take a cake pan (we used 20 cm in diameter) and spray it with cooking spray. Line the bottom and sides of the pan with the larger dough circle. If it sticks out, cut it off and press it into those places where the dough is thinner. Then pour in the apple mixture and cover it with the second part of the dough. Where the sides of the dough meet with the top, press it together with your fingers. Then smoothen the top sheet with the palm of your hand. You can wet your hand in water beforehand so that the dough does not stick to it. Pierce the pie in several places with a fork to let it breathe and stop if from puffing. Bake until golden brown at 180 °C for about 40 minutes. Then take it out of the oven, let it cool down and it’s ready to go.
