Why are salads so brilliant? Well, they are not only super easy and quick to prepare, but will allow you to be creative. And the result is almost always worth it! We got carried away a little and came up with this delicious salad of black rice, chickpeas, mango, and Feta cheese. Although this combination might sound quite crazy, trust us, it tastes phenomenal! Three, two, one, and your nutritionally balanced lunch is ready!
Ingredients:
- 150 g black rice
- 120 g cooked chickpeas (or in brine)
- 100 g Feta cheese
- 1 mango
- 1/4 small red cabbage
- 3 tbsp pumpkin seeds
- 2 tbsp olive oil
- 1 tbsp lemon juice
- a pinch of salt and ground black pepper
- fresh herbs of your choice for garnish (coriander, oregano, etc.)

Directions:
Start by cooking the rice according to the instructions. Then chop the red cabbage finely. Peel, remove the stone, and dice the mango. Dice Feta as well, or crumble it. Cook the chickpeas, drain, and rinse with water, or use the chickpeas in brine and rinse as well. Chop the pumpkin seeds into smaller pieces. Mix all the ingredients in a bowl. Then season it with olive oil, lemon juice, salt, and pepper. Finally, garnish the salad with your favourite fresh herbs and serve! Bon appétit!
