Directions:
First, let’s prepare the dough. Take a large bowl and add flour with a pinch of salt. Make a hole in the middle and add there the crumbled yeast. Sprinkle with coconut sugar and pour lukewarm skimmed milk. Let it rest for about 15 minutes for the yeast to start working. Then add egg, water, and ghee to the flour and make the dough. You can also use a kitchen robot with a kneading hook. Put the mixed dough in the middle of the bowl, cover it with a cloth and let it rise in a warm place for about an hour.
Then transfer the leavened dough to the work surface, roll it into a rectangular shape and smear it with ghee. Combine the cinnamon with coconut sugar in a small bowl and sprinkle the mixture evenly over the dough.
Then roll it up (roll the long side of the rectangle) and cut this roll into slices about 2 cm thick. Place the individual pieces on a baking sheet lined with baking paper, and bake in an oven preheated to 180 °C. Bake until golden, which takes about 20 minutes. After baking, let it cool for a while and serve.
