Can you not imagine a Christmas without sweet desserts, but you are worried about excess calories? You do not have to worry anymore! We have prepared a fitness recipe for coconut lamingtons with protein, which are a great choice for Christmas munching without remorse for every athlete.

Instructions:

First prepare dough. Separate egg whites from egg yolks and whip until stiff peaks. Add xylitol to egg yolks and water, and whisk together into foam. Then add flour, protein, baking powder, milk and whisk until smooth. Gradually add whipped egg whites into prepared mixture and mix gently. Pour the dough into smaller 24 x 16 cm baking tin with lined with baking paper. Place the baking tin into the oven and bake at 180 °C for about 15 minutes. To check if dough is done, use a toothpick. Insert the toothpick in the centre and it should come out clean.

Next, prepare the icing. Add the solid part of the coconut milk to a pot and bring to the boil by constantly stirring. Meanwhile, break the chocolate into pieces and place tit in a bowl. Pour the cooked coconut milk to the chocolate and let stand for 2-3 minutes to melt the chocolate. Finally, mix the cream thoroughly.

Once the dough is baked, let it cool. Cut the cold dough into squares and later cover them with chocolate coating. The second alternative is to use a toothpick and soak in the squares in chocolate icing. Roll in the coconut and let cool in the refrigerator. Bon appetite!
