Ingredients:
- 150 g cooked beetroot
- 100 g low-fat quark
- 1 tbsp olive oil
- salt to taste
- crushed peppercorns to taste
- fresh thyme leaves for the decoration (optional)

Directions:
Put the beetroot in a blender and blend. You can also use an immersion mixer. Then add quark, salt, and pepper and blend again.
Finally, add oil and mix until everything blends beautifully into a smooth cream. Transfer the mixture to a bowl, garnish with fresh thyme, crushed peppercorns and serve.
