Do you like the popular Caesar salad? Then you must also try our modified vegetarian version. Instead of meat, we used chickpeas, which will increase the amount of protein in the salad, and will win you over with its great taste and crunchiness. Of course, bread croutons, vegetables, Parmesan cheese and typical dressing are a must. And if you use our ZERO dressing, you will avoid any extra calories in the salad.
Ingredients:
- 300 g sterilized chickpeas
- 100 g sourdough bread
- 30 g grated Parmesan
- 1 and ½ tablespoons olive oil
- 1 small romaine lettuce
- 1 teaspoon smoked paprika
- 1 teaspoon thyme
- ZERO DRESSING Caesar to taste
- lemon juice to taste
- salt to taste

Method:
Take the chickpeas out of the package and dry them with a paper towel. Then mix with olive oil, smoked paprika, thyme and a some salt. Prepare a tray, line it with baking paper and spread the chickpeas evenly. Bake in the oven heated to 180 °C for about 20 minutes.
In the meantime, prepare the romaine lettuce. Cut it into smaller pieces and put in a larger bowl. Next, start preparing the croutons. Cut the sourdough bread into small cubes. Pre-heat a pan, spray it with spray oil, and toast the bread until crispy. Once you’re done, let the croutons cool for a while and then add them to the bowl with the romaine salad. In the same way, sprinkle grated Parmesan and cooled baked chickpeas. Add ZERO DRESSING Caesar, lemon juice and salt to taste. Serve the salad immediately.
