Charlotte royale cake is a recipe that will catch your eye for several reasons. If you are trying to lose weight, you will surely welcome that this dessert contains fewer calories. In addition, it is rich in protein which satiates. But it will win you over even more with its delicious taste. The combination of sweet cream with a fluffy roll, smeared with slightly sour jam, will conjure up heaven in your mouth. The icing on the cake is the appearance of this dessert. At first glance, it looks like from a luxury bakery, but it is so easy to prepare. So let’s get started.
Ingredients for the roll:
- 200 g forest fruit jam (or red fruit jam)
- 60 g fine spelt flour
- 50 g ground cane sugar
- 4 eggs
- 1 tsp baking powder
- 1 tbsp lukewarm water
- a pinch of salt

- 500 ml skimmed milk
- 250 g soft low-fat curd
- 80 g xylitol
- 2 packages of vanilla pudding (approx. 80 g)

Directions:
First, prepare the dough for the roll. Take 4 eggs and separate the egg yolks from the egg whites. Add a pinch of salt to the bowl with egg whites and beat them until stiff. Then, whisk the yolks with ground cane sugar and a spoonful of lukewarm water in the second bowl. Whisk until you get a thick light foam. First, add sifted fine spelt flour mixed with baking powder into the yolk mixture. Then start adding egg whites gently. Spread the finished dough on a baking sheet lined with baking paper. Put in an oven preheated to 180 °C and bake until golden, about 10–15 minutes. Take the baked dough out of the oven, remove it from the baking paper, and place the hot sheet on a clean damp cloth. Smear it with jam and use a towel to roll it.
Now let’s prepare the cream. Take milk, pudding powders and xylitol and mix thoroughly (you can use a shaker or blender). Then pour the mixture into a pot and cook until you get a thick cream. Add curd into the hot pudding spoon by spoon. You’ll get a smooth cream. Let it cool for a few more minutes.
And we are almost done. Take a deep bowl and line it with stretch wrap. Now, take the finished roll and cut it into about 1 cm slices. Place slices intro the bowl. Then pour about half of the partially cooled cream on the rolls. Cover it with a handful of crushed lyophilized raspberries and add the remaining cream.
