Directions:
An hour before baking, take the eggs out of the fridge. They must be at room temperature. Once you’re ready, you can start preparing the cake.
Prepare a water bath for chocolate. Take a bigger pot, add water and let it heat on the stove. Insert a smaller empty pot into it. Break the chocolate into smaller pieces, put it into the pot and let it melt. Once it is liquid, remove it from the water bath and let it cool a little.
Meanwhile, crack both eggs into the bowl and add coconut sugar. Whisk both ingredients together into a foam, which takes about 4 minutes. Then add sifted flour, protein, milk, melted chocolate and mix again. Then prepare 3 moulds, grease them with butter or spray with oil to prevent the dough from sticking. Divide the mixture evenly and bake in an oven preheated to 180 °C for 10–15 minutes.
Remember to check the cakes during baking. The ideal consistency is when the surface is firm and baked, and the inside is liquid. You will know this, for example, when you touch it with great care. Be careful not to get burned. Once the cakes are ready, tip them over on a plate. Be careful not to let the surface crack and the liquid mass leak from the inside. Then all you have to do is decorate them. We used fresh and lyophilized fruit. However, protein pudding or protein ice cream also go well with the cake.
