Bake the dough, mix the cream, wrap it together and it’s done. Does it sound too simple? It really is that easy. Even beginner bakers can prepare this roll. Its greatest asset is the perfect combination of flavours. Cocoa dough just works great with curd cheese. Especially when there are pieces of chocolate in it. If you manage to wait and let the roll cool down, you will end up with a perfectly refreshing dessert.
Ingredients for the dough:
- 40 g fine spelt flour
- 40 g xylitol
- 25 g chocolate protein powder
- 4 eggs
- 2 tbsp lukewarm water
- 2 tsp baking powder
- 1 tbsp cocoa
- a pinch of salt

Method:
Let’s start with the dough. Take the eggs and separate the yolks from whites. Add a pinch of salt to the egg whites and beat them until stiff peaks. Mix water and xylitol into the yolks and beat them into a light creamy foam. On the side, mix the sifted flour, cocoa, baking powder and protein and gradually mix this whole dry mixture into the yolk foam. At the end, carefully mix in the egg white foam. Take a larger tray, line it with baking paper, and spread the mixture evenly on it. Bake in the oven preheated to 180 °C for about 15 minutes. Once the dough is ready, carefully remove it from the baking sheet and place the upper side on a clean, damp cloth. Then remove the baking paper from it and roll it up together with the tea towel and let it cool. You’ll have to be careful with this step, because the dough is quite hot.
In the meantime, prepare the cream for the filling. Beat the curd cheese with xylitol and vanilla extract. Once you have a smooth cream, stir in the finely grated chocolate flakes. If you want the chocolate to be easier to grate and not melt, put it in the freezer for a while beforehand.
Then unwrap the cooled roll, spread the stracciatella cream evenly on it and carefully wrap it again. Put the roll in the fridge for at least an hour to harden and then serve. It looks best if you dust it with icing sugar before serving, or decorate it with pieces of freeze-dried fruit. Alternatively, you can also add the fruit to the curd cheese. It will look and taste great!
