Imagine a traditional sponge cake. Does it also remind you of visiting your grandmother? To us it definitely does, and that’s why we couldn’t resist this recipe for sponge cake with plums and blueberries, plus in the fitness version! Let’s get on to the preparation of this delicacy!
Ingredients:
- 150 g of oat/spelt flour
- 120 ml of water
- 2 eggs
- 40 g of cane sugar
- 40 g of apple puree (baby food without sugar)
- 30 g of Just Whey protein with vanilla flavor
- 200 g of plums
- 150 g of blueberries
- 2 tsp of baking powder

Preparation:
First of all, we separate the yolks from the whites, and whisk the yolks into a thick foam together with water and cane sugar. Then add apple puree, protein, flour mixed with baking powder and mix everything thoroughly. We should have a creamy dough of a more fluid consistency, so we will add more water as needed. Whip the egg whites until firm and mix lightly into the dough. Pour the dough into a small baking pan (we used 20×20 cm in size) lined with parchment paper. Place plums cut into quarters and blueberries on the dough, and gently push everything into the dough. Bake the sponge cake for about 25 minutes at 180 ℃. After baking, let it cool completely and serve!
