Get to know the delicious flavour of an Arabic herb Tabbouleh salad with quinoa which is a great source of plant-based protein. Ingredients:
- 1 cup of raw quinoa
- 2 cups of water
- 2 cups of cherry tomatoes
- 1 small cucumber
- 1 Balkan cheese
- 1 cup of spring onion (the green part)
- ½ cup of chopped chives
- 2 tbsp. of virgin olive oil
- ¼ cup of lemon juice
- salt and ground black pepper to taste

Directions:
Pour water into a bigger pot, add salt, and then quinoa. Cook until quinoa soaks up all the water, and stir occasionally. While the quinoa is cooking, cut tomatoes, cucumber, and spring onion into small pieces. Mix olive oil, lemon juice and 1 teaspoon of salt in a small bowl. When the quinoa is cooked, pour it into a big bowl, and add the olive mixture. Toss it well, add cut vegetables, chives, and diced Balkan cheese. Toss the mixture well again, and season it to your taste. Your Tabbouleh salad is ready to be served and enjoyed!
