Directions:
First, let’s prepare chicken breasts. Rinse and cut into larger pieces. Now it’s time for the marinade. Take a bowl and mix coconut milk, coconut sugar, a piece of finely grated ginger, pressed garlic, soy sauce, turmeric, and curry powder. Put the meat in the marinade, stir and let it rest in the fridge for at least two hours, ideally overnight.
When the meat is marinated, you can continue with the recipe. Take skewers (they can be made of wood, stainless steel or other safe material) and carefully pierce the chicken. Leave small gaps between the individual pieces so that the meat roasts properly. Then fry the skewered meat briskly in hot ghee.
Then all you have to do is prepare the sauce. The procedure is simple. Mix all the ingredients (peanut butter, coconut milk, coconut sugar, soy sauce, sriracha, and lime juice) and then dilute with water as needed. You can use a mixer to create a fine creamy consistency. Finally, you can decorate your plate with lime, peanuts or coriander.
