You don’t have to make use tortillas to make a wrap, burrito or quesadilla all the time. How about giving other treats a chance? You definitely won’t go wrong with Mexican tacos. We used our tofu and vegetable mixture to fill them. This makes the stuffed tortilla suitable for vegetarians. And of course, there’s no shortage of delicious ZERO sauces to help create the perfect taste experience, but without adding unnecessary extra calories.
Ingredients:
- 240 g tofu
- 210 g tinned corn
- 200 g cherry tomatoes
- 6 tortillas (15 or 20 cm diameter)
- 1 small iceberg lettuce
- 1 orange paprika
- 1 red onion
- 1/2 cucumber
- honey – mustard sauce
- sweet chilli sauce
- black pepper
- smoked paprika
- salt
- oil spray
- lime (optional)

Method:
Take the lettuce and tear it into larger pieces. Cut the cherry tomatoes, peppers, onions and cucumbers into smaller pieces and mix everything together with the corn. Then prepare the tofu, cut into cubes and season with salt, pepper and smoked paprika. In a frying pan that has been sprayed with oil spray and heated, fry the tofu for about 3-5 minutes. In another pan or in the microwave, heat the tortillas and fill them with the vegetables and fried tofu. Top with sweet chilli and honey – mustard sauces to taste. The whole taco can be drizzled with lime juice.
