Are you in the mood for something delicious but don’t want to have to spend time on a complicated dessert? Then this cake is perfect for you. You need nothing more than some eggs and chestnut purée. You’ll be surprised at how smooth it is and how delicious it tastes. If you like, you can even top it with icing. But even without it, we guarantee you’ll enjoy it.

Method:
Take the eggs and separate the yolks from the whites. Whisk the yolks with the thawed chestnut purée. Whisk the egg whites in another bowl until stiff. Gently fold this into the chestnut mixture. Then prepare the cake tin. If you have a silicone one, you don’t even need to grease it. For other tins, it is better to spray the surface with spray oil to prevent the dough from sticking. Then pour the batter in, put it in a preheated oven at 150 °C and bake for about 40 minutes. You can tell when it is ready by inserting a skewer into the cake. There must be no dough left on it. If the dough still sticks to the skewer, bake for 5-10 more minutes.
The baked cake can be left to cool and then served right away. If you want to spruce it up even more, you can pour melted white chocolate over it and sprinkle it with crushed lyophilized raspberries. It also tastes great on its own, topped with quark cheese or protein ice-cream.
