Fitness recipe: Spinach quiche – salty French pie

Let’s make together Quiche – the salty French pie that uses a pie crust for its base and the cheese-egg custard with lots and lots of veggies! The magic there is a variety of possibilities, you can just throw all of the left-over vegetables that you don’t know how to use into the pie, and don’t forget to mix some fresh herbs with it as well. Our spinach quiche is a sure bet – you can make your family happy but also take it with you to a party or a picnic. Moreover, it’s delicious when eating warm but also cold. Let’s do this, shall we?

For the pie crust:

  • 120 g of wholewheat spelt flour
  • 100 g of fine rolled oats
  • 100-130 ml of milk
  • 30 g of olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper powder
  • ½ teaspoon provencal spices

For the custard:

  • 150 ml of milk
  • 100 g baby spinach
  • 80 g feta cheese
  • 60 g cherry tomatoes
  • 3 eggs
  • 3 cloves of garlic
  • ½ teaspoon provencal spices
  • salt and black pepper powder

Instructions:

Mix all the above-mentioned ingredients together and make a firm dough with your hands. If the dough is too firm add a little splash of milk. Place the dough into a pre-greased slightly higher pie dish and move it around with your fingers (we used 24 cm in diameter dish), and pre-bake it at 180°C for about 10 minutes.

Prepare your custard in the meantime. Wash your spinach first and steam it with a little bit of water. Once this is done, combine it with crumbled feta cheese, milk, and pressed garlic. Let’s add the spices and salt however you like it. Mix the eggs at the end.

Once the custard is ready, pour it over pre-baked dough, place some cherry tomatoes on top, and bake your quiche at 180°C for approximately 40 minutes. Enjoy!
