Today’s cake will appeal to all lovers of fluffy desserts. The sponge base will literally melt in your mouth. And then to create an irresistible combination full of protein just add sweet cream made of protein powder and quark. Who could resist?
Ingredients for the sponge base:
- 200 g spelt flour
- 100 ml warm water
- 100 ml semi-skimmed milk
- 80 g xylitol
- 15 g coconut oil
- 4 eggs
- 2 tsp baking powder
Ingredients for the filling:
- 500 g low-fat quark
- 30 g protein powder (we used unflavoured, but any flavour will do)
- 30 g lyophilized strawberries and raspberries
- Vanilla Flavor Drops to taste

Ingredients:
Separate egg yolks from whites into different bowls. Add xylitol to the egg whites and whip to stiff peaks. With a blender, beat the egg yolks with some warm water until frothy. Next, add milk, melted coconut oil and flour (mixed with baking powder). Then carefully mix the egg whites into this mixture.
Take a cake tin and line the bottom and sides with baking paper. If you don’t have any, spray it with some cooking oil and dust it with flour. Pour the dough into the tin and bake in the oven preheated to 180 °C for 20–30 minutes until the sponge cake is golden brown.
While you wait for the cake to cool down, start preparing the filling. Beat the quark with protein powder and Vanilla Flavor Drops. Take the cooled cake and cut it in half horizontally. Put part of the cream on the first half of the cake and sprinkle it with half (15 g) of your freeze-dried fruit.
Put the two pieces of the cake back together and spread the rest of the cream on top. Then sprinkle the cake with the remaining 15 g of freeze-dried strawberries and raspberries and you’re done.
Let the cake cool down in the fridge for at least a few hours. The cream hardens nicely and makes the sponge more moist. In addition to a better taste experience, it’ll also be easier to cut it into slices.
