Today we have decided to prepare a vegan treat, which will surely strike a chord with meat lovers and healthy food consumers. The base consists of chickpeas, potatoes and a ton of vegetables. There is no shortage of micronutrients and fibre. The great natural taste of these ingredients will win you over after the first try. In addition, the stew is warming and satisfying. Perfect for lunch or dinner.
Ingredients:
- 500 ml vegetable stock
- 400 g RTE chickpeas
- 200 g potatoes
- 100 g carrot
- 3 cloves of crushed garlic
- 2 tablespoons olive oil
- 1 onion finely chopped
- 1 large tomato
- 1 sliced paprika pepper
- 1 tablespoon sweet paprika
- ½ tablespoon ground cumin
- ½ tablespoon marjoram
- a pinch of salt
- ground black pepper to taste
- green sprigs for garnish (optional)

Method:
Heat the oil in a saucepan, fry the chopped onion, garlic and add all the spices, i.e. ground black pepper, a pinch of salt, marjoram, cumin and sweet paprika. Add the peeled and chopped potatoes, carrots, chopped tomato and paprika pepper, stock and simmer covered for about 10 minutes.
Add the RTE chickpeas to the semi-soft vegetables and cook until the potatoes are soft enough.
Then take a ladleful of the cooked ingredients, put it in a tall container and blend with an immersion blender. Then pour the blended mixture back in, thus thickening the whole mixture. When you’re done, you can serve the stew straight away. Garnish the dish with green sprigs.
