Do you regularly end up with a pack of caramels in your basket at the store? Then it’s time to try making them at home. The preparation is really, and the result is just perfect. The combination of cashew butter and sweet maple syrup is perfectly complemented by crunchy pieces of salt. You can eat them as they are, but they also taste great if you let them melt into hot oatmeal.
Ingredients:
- 170 g cashew butter
- 140 g maple syrup
- 50 g coconut oil
- coarse salt to taste

Method:
Mix all the ingredients together until smooth, except for the salt, i.e. cashew butter, maple syrup and coconut oil.
Then get a square tray or mould (we used 24 x 24 cm) and line its entire surface with baking paper. Spread the mixture evenly in the mould and let it harden in the fridge for about an hour. If you don’t want to wait that long, put it in the freezer. This will shorten the hardening time by approximately half. Once you are done, take out the baking paper with the fudge from the tray and cut it into 20 equal pieces. Then sprinkle them with some coarse salt and they’re ready to be served. If you end up with some leftovers, make sure to store them in the fridge.

If you like store-bought caramels, you definitely have to try these homemade ones. The sprinkled coarse salt elevates them to an even higher level.
