Have you heard of a dish called stir-fry? It is a method of preparation in which you put all the ingredients in a hot pan with oil and quickly sauté them to make them crunchy. Sounds simple, right? The hardest part is deciding which ingredients to use for your stir-fry. We went for a vegan option this time and used tofu as a main ingredient. We also added vegetables and mushrooms, which give the dish an unmistakable flavour. The result is definitely worth it.
Ingredients:
- 200 g tofu
- 200 g mushrooms
- 150 g zucchini
- 150 g carrot
- 100 g snow peas
- 30 ml soya sauce
- 20 g coconut sugar
- 1 large red onion
- 1 tablespoon olive oil
- Juice from 1/2 a lime
For serving (optional):
- rice
- sesame seeds
- fresh coriander
- lime

Method:
First, take tofu and use paper napkins to remove any excess water. Cut it into smaller cubes. Slice zucchini, mushrooms and onion into thin slices. Peel carrots and cut them into thin slices. Next, heat a pan with oil and fry the mushrooms, tofu, onions and carrots in it. After a while, add zucchini, snow peas and coconut sugar. Pour soy sauce and lime juice over the mixture and mix everything thoroughly.
Sauté for 2 minutes and then remove from the heat. The vegetables should still be crisp. And you are done. Then just choose a side dish and serve.
Our tip: The dish tastes great with rice, sesame seeds, coriander and lime. But you can’t go wrong with quinoa or ZERO noodles.
