Instructions:
First of all, cook quinoa and chickpeas according to the instructions. Meanwhile, cut the cheese, carrots, tomatoes, and parsley into small pieces. After cooking, mix quinoa and chickpeas together in a large bowl with vegetables.
To prepare tortillas, mix water, flour, corn starch, parsley and a pinch of salt together. Prepare a pan with a non-stick surface, spray it with coconut cooking spray and heat.
