- 200 g of zucchini
100 g of quinoa
100 g of chickpea flour
100 g vegan cashew cheese with chilli
- 70 g of red pepper
- 1 small onion
- a few twigs of parsley
- Himalayan salt and black pepper

Method:
First, you have to cook quinoa according to the instructions. Meanwhile, chop the zucchini, peppers and onion and smash the cashew cheese with a fork. When quinoa is cooked, mix it together with chopped vegetables, cashew cheese, torn parsley, salt, black pepper and flour in a large bowl. Then, form pancakes with wet hands. Prepare a pan with a non-stick surface and spray it with coconut oil. Fry pancakes until golden on both sides. Sprinkle with arugula, add ketchup and enjoy a delicious meal!
