Erythritol is a sugar substitute, more specifically it is sugar alcohol that can be found in some kinds of fruit. It looks just like standard beet sugar and it even has a similar flavour, its sweetness is approximately 60-75%. It is produced by yeast fermentation of glucose. The difference between Erythritol and a common type of sugar is that Erythritol is calorie-free and has zero glycemic index. Therefore, it is suitable for people who watch their calorie intake. You can use it to sweeten drinks, but also for cooking or baking.
